Key Responsibilities & Duties
As a Salad Maker in our high-energy kitchen environment, you will be entrusted with a range of critical tasks that ensure the highest quality of food preparation and customer satisfaction. Your primary focus will be on creating fresh, innovative, and visually appealing salad dishes.
Food Preparation & Station Management
- Execute precise and efficient preparation of all salad menu items according to established recipes and quality standards.
- Maintain impeccable cleanliness and organization at the salad station, ensuring compliance with all food safety and sanitation regulations.
- Wash, chop, slice, and dice various fruits, vegetables, herbs, and other salad ingredients with consistent precision and attention to detail.
- Prepare house-made dressings, vinaigrettes, marinades, and specialty salad components from scratch following standardized recipes.
- Monitor ingredient inventory levels at the salad station, proactively communicating supply needs to kitchen management to prevent shortages.
- Implement proper rotation procedures (FIFO) for all perishable ingredients to minimize waste and ensure peak freshness.
Quality Control & Customer Experience
- Consistently plate and present salad dishes with artistic flair and attention to visual appeal, maintaining portion control standards.
- Collaborate with servers and front-of-house staff to accommodate special dietary requests and customize salads according to guest preferences.
- Conduct regular taste tests and quality checks to ensure all salad items meet established flavor profiles and texture standards.
- Respond promptly to customer feedback and special requests, demonstrating flexibility and commitment to exceptional dining experiences.
- Stay informed about current food trends, seasonal ingredient availability, and innovative salad preparation techniques.
Kitchen Operations & Safety
- Adhere strictly to all HACCP guidelines, food handling protocols, and kitchen safety procedures to maintain a secure working environment.
- Properly handle and maintain all kitchen equipment specific to salad preparation, including sharp knives, mandolines, and food processors.
- Participate in daily kitchen setup and breakdown procedures, ensuring the salad station is fully prepared for service periods.
- Maintain accurate temperature logs for refrigerators and salad bars, taking corrective action when necessary to ensure food safety.
- Collaborate effectively with other kitchen team members, including chefs, line cooks, and dishwashers, to ensure smooth service flow.
Qualifications & Requirements
Education & Experience
- Possession of a Doctorate degree is required for this specialized culinary position
- Minimum of 3-5 years of professional experience specifically in salad preparation and cold kitchen operations
- Proven track record in high-volume restaurant, hotel, or catering environments
- Formal culinary education or equivalent apprenticeship training is highly desirable
- Documented food safety certification (HACCP, ServSafe, or equivalent)
Technical Skills & Abilities
- Expert knife skills with demonstrated proficiency in various cutting techniques (julienne, chiffonade, brunoise, etc.)
- Comprehensive knowledge of fresh produce selection, quality assessment, and proper storage methods
- Ability to work efficiently under pressure during peak service hours while maintaining quality standards
- Strong understanding of flavor profiles, food pairing principles, and nutritional considerations
- Familiarity with commercial kitchen equipment operation and maintenance procedures
- Physical stamina to stand for extended periods and lift heavy items (up to 25kg)
